Mai Tai IPA

Like with Campari in the Bitter Mai Tai, this classic tiki cocktail does well with the addition of a citrusy-bitter ingredient. Here, reach for a bright, medium-bitter IPA to lengthen this drink into carbonated and slightly hoppy delight.

• ½ oz Almond Orgeat Syrup
• ¼ oz Demerara Gum Syrup
  
• 1 oz aged rum
• ½ oz Jamaican rum (Smith & Cross recommended)
  
• ½ oz orange liqueur
  
• 2 oz IPA
• ¾ oz fresh lime juice
  

• Add all ingredients except for IPA to a cocktail shaker
• Add ice and shake hard for 10 seconds
• Strain into a highball glass filled with ice and top with IPA
