Clarified Piña Colada
This recipe makes 4 cocktails and comes from Jon & Siobhan, @subtletiki. We take the classic Piña Colada and clarify it, changing the flavor, appearance, and mouthfeel.
Milk washing is a unique drink clarifying technique where you combine a stirred cocktail with whole milk and then strain through coffee filters to create an impressive, transparent version of that drink.
Any cocktail with fresh, acidic juice can be clarified by milk washing, so you can really run wild with this one.
Ingredients:
- ½ oz Demerara Gum Syrup
- 3 ½ oz aged rum
- 3 ½ oz Plantation Pineapple Rum
- 4 oz coconut water
- 2 oz velvet falernum
- 2 oz pineapple juice
- 1 ½ oz lime juice
- 3 oz milk
Instructions:

Add all ingredients EXCEPT THE MILK to a mixing glass and stir
- And the stirred cocktail to 3 oz of milk and stir
- Let the mixture sit for 30-45 minutes
- Strain with a fine mesh strainer to remove larger pieces
- Strain again with a coffee filter
- Pour over a large ice cube in a rocks glass
