Clover Club


A sort of fruitier, more ethereal Pink Lady, this pre-Prohibition stalwart named for a turn of the century writers' salon in Philadelphia.  

Ingredients:

  • ½ oz Classic Gum Syrup
  • 1 ½ oz gin
  • ½ oz dry vermouth
  • ½ oz lemon juice
  • 3-4 raspberries
  • egg white

Instructions:

  • Muddle berries and syrup in a mixing tin 
  • Add remaining ingredients and shake to break up the egg white
  • Add ice and shake until chilled
  • Double strain into a coupe

Glass:

  • Coupe

Garnish:

  • Raspberries
