
Non-Alc Midnight in Maui
"I’ve been wanting to create a non-alcoholic cocktail that utilizes a dark beer, and I finally sat down and worked through it. To make it, I tried several NA stouts, porters, and dark beers, and I finally settled on Athletic All Out Extra Dark in the end. It’s bitter but not overly so, and its complexity works really well with all the other ingredients. Guar gum helps create and stabilize the foam that gives the drink its silky texture, subtle pineapple and nutty Orgeat hint at Tiki without taking it over the top, and the amaro, dark beer and bitters provide an interesting and complex base for the drink. I really enjoyed working on this one. I think it’s delicious!" This cocktail was a finalist in our 2025 Liber Games.
Ingredients:
- ½ oz Almond Orgeat Syrup
- ½ oz Amaro Lucano NA Aperitif
- ½ oz Giffard Pineapple NA Liqueur
- 3 oz Athletic Brewing All Out Extra Dark NA Beer
- 2 dashes All the Bitter New Orleans Bitters
- ⅛ tsp guar gum
- Pinch of salt
Instructions:
- Add all ingredients, minus guar gum, in a mixing glass (make sure ingredients are cold)
- Sprinkle guar gum on top
- Using a handheld frother, froth the mixture for 20 seconds to create foam
- Pour cocktail directly into a coupe (don't strain)
