The Old Rover is a dry, lightly bitter and tropical gin cocktail. A distant cousin to a Negroni, replacing vermouth with tea and remixing the flavors into a refreshing and summery cocktail.

Ingredients:

  • ¼ oz Pineapple Gum Syrup

  • 1 ½ oz Barrel Aged Gin

  • 1 oz black tea (chilled)

  • ½ oz Luxardo Bitter Bianco

  • ¼ oz vanilla liqueur

Instructions:

  • Add all ingredients to a mixing glass with ice
  • Stir 20 seconds and strain into a chilled highball glass with ice

Glass:

  • Highball

Garnish:

  • Pineapple Wedge
