Mezcal Buzz

A mezcal cocktail From Jamie Boudreau at Canon. Long and refreshing, this cocktail showcases a mainstream application of mezcal.

Ingredients:

• ¾ oz Fiery Ginger Syrup
• 1 ½ oz mezcal (a citrusy, low-smoke option recommended e.g. Montelobos)
  
• ½ oz lime juice
  
• ½ oz egg white
  
• 2 dashes lime bitters
• 3 oz club soda

Instructions:

• Add all ingredients except club soda to a cocktail shaker with ice
  
• Short shake for 5 seconds and strain into a highball filled with ice
  
• Top with club soda and stir
