Spanish Old Fashioned

Build this Old Fashioned a little differently. Spanish brandy is renown for its angular,  aggressive complexity. It's definitely distinct from ultra smooth cognacs, and it therefore does well with this muddled-fruit strategy.

Ingredients:

• ¼ oz Demerara Gum Syrup
• 2 oz Spanish brandy de Jerez
  
• 2 dashes aromatic bitters
• maraschino cherry
  
• orange slice

Instructions:

• Muddle syrup and fruit in a rocks glass
  
• Add brandy and bitters, plus crushed ice
  
• Stir and top with more crushed ice
