Clarified Mai Tai

A bit of work but it's worth it for the striking visual. This clarified mai tai hits all the flavor notes you love. This recipe is scaled for 2 servings.



  • Add all ingredients, except for milk, to a mixing glass with ice
  • Pour the ingredients into the milk (important order, if done the other way then curds are difficult to strain)
  • Stir for 20 seconds
  • Let is rest for 30 minutes allowing the curds to separate
  • Filter once through fine mesh strainer or nut milk bag. Then Filter once or twice more through a coffee filter (bondex chemex filters recommended)
  • Strain into a chilled rocks glass
  • Garnish with mint
