Roll Tango

The Persian Sour is a beautiful drink thanks to the luxurious mouthfeel provided by Classic Gum Syrup and egg white.  Chocolate bitters gives a rich complement to cognac, and lemon juice brightens the flavors.

 

Ingredients:

  • ½ oz Demerara Gum Syrup
  • 1 ½ oz mezcal
  • ½ oz fernet
  • ½ oz lime
  • dash of salt
  • dash of pepper

Instructions:

  • Add all ingredients to a cocktail shaker
  • Add ice and shake for 10 seconds
  • Strain over ice into a chilled rocks glass

Glass:

  • rocks

Garnish:

  • lime wedge
