Vanilla is one of the most labor-intensive agricultural products in the world, and Madagascar's farmers have perfected the craft over generations. Grown along the island's lush northeastern coast, each vanilla orchid flower is delicately hand-pollinated before spending 9–10 months maturing on the vine. Once harvested, the green pods undergo a traditional slow-curing process—scalding, sweating, sun-drying, and conditioning—that concentrates their flavors and produces the signature creamy, warm, slightly smoky aroma Madagascar vanilla is famous for. The cured beans are then processed into oleoresin directly on the island, ensuring that nothing is lost from vine to syrup.
So, what is an oleoresin?
The “oleo”, or oil, component refers to the essential oil of vanilla, which delivers the highly aromatic compounds of vanilla. The “resin” component provides a complex, earthy balance with its non-volatile flavor compounds, lending both nuance and depth of flavor. Together, an oleoresin conveys the full flavor spectrum of vanilla in a way that can't be accomplished by the more traditional method of alcohol extraction.

I make a Jade Gimlet with the Madagascar Vanilla syrup. 3 ounces of vanilla vodka, (I use Absolute but Stoli works too) 2 ounces of Madagascar Vanilla syrup, and 1 ounce of lime juice, unsweetened.
