Sirope de canela de Indonesia
Our cinnamon syrup expertly captures the exotic, spicy-sweet flavor of one of the world’s most coveted spices. The magic is in our custom cinnamon bark oleoresin, which blends Ceylon and Cassia varieties to fully capture the vibrancy of this iconic spice. An addition of demerara sugar provides subtle layered notes of toffee, molasses, and caramel.
Cinnamon works wonders in the fall and winter when you pair it with seasonal fruits like apple, use it in a Cinnamon Old Fashioned, or add it to warming cocktails like a Hot Toddy. During the summer months, cinnamon syrup's exotic complexity shines in many tiki classics like the Zombie, Pearl Diver, and Jet Pilot.

We source two distinct varieties of cinnamon, each sustainably harvested from the inner bark of the evergreen Cinnamomum tree. Our Ceylon cinnamon ("true cinnamon") is grown in Sri Lanka and is known for its subtle floral character and papery texture. Our Cassia cinnamon, sourced from Indonesia, provides an intense red-hot spice profile more typical of the cinnamon flavor familiar to many. At harvest, the bark from both trees is carefully peeled away from the tree and dried, forming the distinct curls we commonly know as cinnamon sticks.
So, what is an oleoresin?
The “oleo”, or oil, component refers to the essential oil of cinnamon, which delivers the highly aromatic and fiery heat found in the volatile compounds of cinnamon. The “resin” component provides a complex, earthy balance with its non-volatile flavor compounds, lending both nuance and depth of flavor. Together, these exceptional natural ingredients capture and convey the full flavor spectrum of cinnamon in a way that has yet to be accomplished in syrups.
What is the shelf life of Cinnamon Syrup and how long will it stay fresh after opening?
It has an 24 month shelf life. See the best buy date on the bottle for the most accurate expiration date.
Once opened and stored in the fridge, Cinnamon Syrup will stay fresh for at least 12 months.
Cinnamon Syrup Recipes
The World’s First Oleoresin Cinnamon Syrup
Early on, we realized that the traditional method of boiling cinnamon into water was not only wasteful and inefficient, but also yielded a syrup that lacked the iconic intensity of the spice. Commodity extracts frequently used by syrup companies were also ruled out as artificial tasting and one dimensional. After two years of research and experimentation, we perfected an innovative solution—a custom cinnamon oleoresin.

The Best of Both Woods
There are two broad varieties of cinnamon, Cassia and Ceylon, and each one has unique flavor advantages over the other. Our proprietary blend features Ceylon cinnamon for its complex, floral, and slightly delicate notes, and Cassia to provide a powerful backbone and that classic "red hot" spice. Together, they create a wonderfully layered and robust syrup that has the nuance of Ceylon and the assertiveness of Cassia.
