Yuzu thrives in the mountainous, humid regions of Japan. Our juice comes from the Kochi Prefecture on Shikoku Island where the the largest share of the country's crop is produced. The ripe yellow yuzu we use is harvested between late October and late December and processed within days to lock in its vibrant flavor and aroma.
