We source two distinct varieties of cinnamon, each sustainably harvested from the inner bark of the evergreen Cinnamomum tree. Our Ceylon cinnamon ("true cinnamon") is grown in Sri Lanka and is known for its subtle floral character and papery texture. Our Cassia cinnamon, sourced from Indonesia, provides an intense red-hot spice profile more typical of the cinnamon flavor familiar to many. At harvest, the bark from both trees is carefully peeled away from the tree and dried, forming the distinct curls we commonly know as cinnamon sticks.

I was really excited for this syrup as it's called for in a lot of tiki cocktails. Unfortunately I don't really like it at all. It makes everything taste like fireball. Very cinnamon but not in a pleasant way. I guess it's okay if you use a bar spoon but any more than that is off-putting. This is the only liber and co syrup that I haven't liked and I have tried almost all of them.
Yummy. To my taste buds, it's like the perfect combination of the comforting flavor of a cinnamon roll and the zing of a cinnamon candy.

I bought this to use in some tiki cocktails. I haven’t had a chance to make one yet with it. However I have been using it in my hot tea and hot toddies. It gives you a little taste of Christmas!
